Sutlach (rice pudding, firinda sutlaç)

I finish my Turkish cuisine menu and participation in the "Taste" competition with dessert - one of the most popular in Turkey. It is on the menu of any street cafe and expensive restaurant. This is sutlach - Turkish rice milk pudding. A real Turkish sutlach is of two types - a simple sutlach and a burnt sutlach.

Ingredients
  • milk 1 liter
  • rice 3 glass (s)
  • sugar 1 cup (s)
  • carob syrup 2 tsp
  • starch 3 tbsp
  • egg yolk 2 pcs.
  • vanilla pod 1 pc.
  • brown sugar 1 tbsp
  • cinnamon - to taste
  • physalis and icing sugar - for serving

STEP-BY-STEP COOKING RECIPE

Step 1

This is sutlach - Turkish rice milk pudding. Sort the rice, rinse thoroughly in running water and boil until cooked; put on a sieve. In a deep saucepan, beat the yolks with sugar and carob syrup, gradually adding milk. Heat milk with sugar and yolks over low heat, not boiling.
Step 2
Add the rice, the contents of the vanilla pod and the starch diluted with water (use a quarter glass of water). Heat again, without bringing to a boil, and remove this mass from heat. Pour the contents of the saucepan into portioned bowls made of fire-resistant material.
Step 3
We now have two options. If you want a simple sutlach, then you just have to put the bowls with the cooked mass in the refrigerator. Because sutlach is always eaten cold, sprinkled with a little cinnamon on top.
