Oat pancakes with pumpkin
  • 400 g pumpkin pulp
  • 200 g long-cooked oatmeal
  • 100 g low fat yogurt
  • 2 egg whites
  • 2 tbsp. l. extra virgin olive oil
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • low fat yogurt for serving


Step 1
Grind the oatmeal in a coffee grinder into flour, mix with baking powder and cinnamon.
Step 2
Grate the pumpkin on a coarse grater, mix with yogurt. Whisk the whites until fluffy.
Step 3
Mix the pumpkin mass with the flour, then gently add the whipped egg whites in three steps, stirring with a spatula from bottom to top.
Step 4
Preheat a nonstick skillet over medium heat. Lubricate the pan with a brush and spoon over the pancakes.
Step 5
Fry, covered, until golden brown on both sides. Place the finished pancakes in a bowl under the lid. Serve warm with yogurt.
