Zucchini noodles with tomatoes and sesame seeds
Zucchini noodles are a healthy and vegetarian alternative to classic pasta. We suggest preparing it with delicate avocado and black sesame seeds. This pasta is best served with fish and seafood instead of a side dish.
Ingredients
- 4 medium zucchini
- 2 tsp olive oil plus for frying
- 2 avocados
- 4 medium meaty tomatoes
- 2 limes
- 3 tbsp. l. apple cider vinegar
- ground chili
- 4 tbsp. l. black sesame
- 1 lime to serve
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Grate the zucchini on a coarse grater or chop with a special tool to make noodles. Heat oil in a skillet and sauté the zucchini until soft.
Step 2
Cut the avocado and tomato pulp into cubes and drizzle immediately with lime juice. Toss the noodles with avocado, tomato and dill.
Step 3
Season the noodles with olive oil and vinegar, and season with chili powder.
Step 4
Divide and sprinkle with sesame seeds. Serve garnished with lime wedges.
