A whole-grain version of the most beloved (by residents of the post-Soviet space) apple pie.

Ingredients
  • chicken egg 4 pcs.
  • sugar 120 g
  • whole wheat flour 100 g
  • corn starch 20 g
  • apples (hard varieties) 500 g
  • freshly squeezed lemon juice 15 ml
  • vegetable / butter (for greasing the mold) 10 g
  • ground cinnamon 3 g
  • icing sugar (for dusting) 30 g
  • salt 2 g

STEP-BY-STEP COOKING RECIPE

Step 1
We turn on the oven to preheat (180 degrees, mode - convection / bottom and top heating).
Step 2
Cut apples, washed, peeled and core, into slices, sprinkle with lemon juice and, if desired, sprinkle with cinnamon.
Step 3
Prepare a classic biscuit: carefully separate the whites and yolks of broken eggs, pour the first into a clean dry bowl and beat with salt until stable peaks. In another bowl, beat the egg yolks with sugar until a fluffy light mass. Using a spatula, add the whipped whites into the yolk mass and sift the flour with starch. Knead the dough from bottom to top, trying to keep as much air as possible.
Step 4
Lubricate a round, oval or square shape (diameter - 20-24 cm) with oil and fill 1/2 of the dough. Spread the apple slices evenly and cover with the remaining dough. We level the surface.
Step 5
We send the cake to the oven for 40-45 minutes. We leave the finished charlotte in the turned off closed oven for another 15 minutes, then cool it, remove it from the mold and sprinkle it with powdered sugar to taste.
