Tiger prawns with tiger milk

Tiger's Milk is a special Peruvian marinade that does not require any tigers. Ginger, lime, garlic, oranges, sesame oil, soy sauce and brandy are enough. The resulting marinade is ideal for any raw fish dish.

Tiger prawns with tiger milk
Ingredients
  • 18 raw tiger prawns
  • 150 g fillet of the freshest white sea fish
  • 300 ml fish or shrimp broth
  • 150 ml freshly squeezed lime juice
  • 1 tsp. lime peel
  • 3 cloves of garlic
  • 3 cm fresh ginger root
  • 1 large shallot onion
  • 1 small red chili
  • 2-3 bushes of cilantro with roots
  • 2 tsp medium ground sea salt
  • 15 ice cubes
  • vegetable oil
  • cilantro leaves for serving

STEP-BY-STEP COOKING RECIPE

Step 1
Peel shallots, garlic, ginger and chili and chop finely. Rinse the cilantro thoroughly with the roots and chop. Chop fish fillets finely.
Step 2
Combine all ingredients except shrimp and vegetable oil in a blender and beat until smooth. This is "tiger milk".
Step 3
Peel the shell of the shrimp, leaving the tail. Remove the intestinal vein. Dip each shrimp in tiger milk and marinate for 10 minutes.
Step 4
Then shake off the marinade and very quickly fry in hot vegetable oil until tender.
Step 5
Pour tiger milk into martini glasses. Put shrimps in each, hanging them by the tail. Garnish with cilantro leaves. Serve immediately.
