Berry muffins with curd filling

Crispy topping, then fragrant berries, delicate cottage cheese and fluffy dough - this is how the layers are arranged in these delicious muffins. Perhaps you have met similar ones in some coffee shop. Now you can easily prepare them at home.

Berry muffins with curd filling
Ingredients
  • 150 g flour
  • 1.5 tsp. baking powder
  • 1/4 tsp salt
  • 1/2 tsp soda
  • 1 large egg
  • 1/2 cup sugar
  • 125 g natural yoghurt
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 glass of mixed berries (raspberries, strawberries, blueberries)
  • 180 g cottage cheese or cream cheese
  • 1 tsp grated lemon zest
  • 3-4 tablespoons of sugar
  • For topping:
  • 1/2 cup flour
  • 1/3 cup sugar
  • 50 g butter

STEP-BY-STEP COOKING RECIPE

Step 1
1. Preheat oven to 200 ° C. Lubricate 12 large muffin molds with vegetable oil or insert paper inserts.

2. For sprinkling, melt butter in the microwave in a bowl, add sugar and flour and stir with a fork until fine crumbs form. Set aside.

3. Sift the flour with salt, baking powder and baking soda into a bowl. In another bowl, combine the egg with sugar, yoghurt and butter and add vanilla extract. Pour wet mixture into dry mixture and stir quickly.

4. Divide the dough into molds, make indentations in the center. For the filling, mix the cottage cheese with sugar and zest, spread the filling over a spoonful into the dough recesses. Then add the berries and sprinkles.
Step 5
5. Place the muffins in the oven, reduce the temperature to 175 ° C and bake for 20-25 minutes. Cool the muffins in the pan, 10 minutes, then gently transfer to the wire rack and leave for another 15–20 minutes.
