Couscous with vegetables

Couscous is a groat of Maghreb or Berber origin, but it came out of this area long ago and is widely used in Turkish cuisine. It is found in salads, vegetable dishes, puddings and casseroles. I have for you a very simple and affordable dish made from this cereal with vegetables. Also couscous is easily replaced by the more traditional bulgur.

Couscous with vegetables
Ingredients
  • couscous 300 g
  • medium tomatoes 2 pcs.
  • carrots 150 g
  • 1/2 bunch parsley (s)
  • medium red onion 1/2 pc.
  • red bell pepper 1/2 pc.
  • garlic 2 pcs.
  • turmeric 1 tbsp.
  • salt
  • pepper
  • olive oil - for frying
  • zira, a pinch - optional

STEP-BY-STEP COOKING RECIPE

Step 1
Rinse the tomatoes and put them in boiling water for 2-3 minutes, remove the skin, remove the seeds. Rinse and peel carrots, peppers and onions. Finely chop the tomato pulp and peeled vegetables. Fry whole cloves in olive oil until golden brown, remove and discard the fried garlic - we only need aromatic oil. Reduce heat and add vegetables and simmer until tomatoes are softened. Season with salt and pepper to taste and stir.
Step 2
Pour the grits into the vegetable mixture, stir and pour 1-2 cups of hot water into the pan. Cook over low heat for about 10-12 minutes.
Step 3
Rinse the parsley, chop finely and add to the finished cereal. Stir, sprinkle with cumin and serve.
