Stew with lamb, dried apricots and chickpeas

Dried apricots go well with meat, especially with lamb. Choose for this dish its sweet and sour varieties and the hardest fruits.

Stew with lamb, dried apricots and chickpeas
Ingredients
  • 500 g lamb pulp
  • 400 g chopped tomatoes
  • 400 g finished chickpeas
  • 200 g dry
  • 1 large red onion
  • 2 large carrots
  • 2 cloves of garlic
  • 600 ml chicken stock
  • 120-150 g of pomegranate seeds
  • 2 large handfuls of cilantro
  • 2 tbsp. l. mixtures of ras el hanut
  • olive oil
  • salt, black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Cut the onion into 6-8 pieces. Cut the carrots into large cubes. Cut the garlic in half.
Step 2
Cut the lamb into medium cubes, fry in oil, 3 minutes, transfer to a bowl.
Step 3
Add onions, garlic and carrots to the pan, cook for 3 minutes. Add tomatoes, salt, pepper and ras el hanut.
Step 4
Transfer to an ovenproof dish with high sides. Add the chickpeas, lamb and dried apricots, cut in half. Pour in broth, bring to a boil.
Step 5
Cover with a lid, place in the oven at 180 ° C for 1 hour. Check the meat is cooked. Cook for another 20 minutes if necessary. Arrange on bowls, garnish with pomegranate seeds and cilantro. Serve with couscous or rice.
