Blood sausage, apples and pistachios

Ingredients
  • 2 blood sausages (500 g)
  • 1 juicy carrot
  • 1 large sweet and sour apple
  • 200 g peeled pistachios
  • 100 g flour
  • 2 eggs
  • vegetable oil for deep fat
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Chop the pistachios into small pieces. Peel the apples. Cut into 4 pieces and core. Cut the carrots into medium pieces.
Step 2
Cut the peeled sausages into medium pieces too. Grind in a blender with carrots and apples until smooth. Squeeze out excess juice if necessary. Season with salt and pepper. Refrigerate for 20 minutes.
Step 3
Place the flour in an even layer on a large plate. Beat the eggs with a pinch of salt until smooth.
Step 4
Form the minced meat into balls the size of a chocolate truffle. Dip in flour, dip in egg. And roll in nut crumbs.
Step 5
Fry the balls in oil heated to 180 ° C, 60–90 sec. Place on paper towels. Cool slightly.
