Puff pastry with liver
Ingredients
- mutton liver (lung, heart, liver) 1 pc.
- chicken liver 200 g
- fatty lamb 200 g
- onion 2 pcs.
- carrots 2 pcs.
- salt, pepper to taste
- chicken egg 1 pc.
- milk 50 ml
- dried basil 1 pinch (s)
- sesame seeds 2 tbsp
- puff pastry 500 g
- flour 3 tbsp.
STEP-BY-STEP COOKING RECIPE
Step 1
Prepare the filling. Rinse the lung and heart, remove films and large vessels, cut into large pieces. Cover with cold water, salt and cook for about an hour.
Step 2
Rinse the meat, dry it and cut into small pieces. Heat a frying pan, put the lamb on it. Fry, stirring occasionally, for 10 minutes. Then cover and cook for another 10 minutes.
Step 3
Peel and chop the onion into arbitrary pieces, peel and grate the carrots and send to the pan with meat.
Step 4
Liver (both lamb and chicken - add the last filling for tenderness) Add the liver, wash, remove the films and cut into large pieces to the meat, season with salt and pepper and simmer for 10-15 minutes. Remove the ready-made lung and heart from the broth, cool and mince. Do the same with the liver and meat. Mix the filling, taste and, if necessary, salt.
Step 5
Defrost the dough, cut into pieces and roll thin circles about 12-15 cm in diameter on a floured surface.
Step 6
Place the filling, mold the pies and place them on a greased baking sheet.
Step 7
Stir the egg and milk, add chopped dried basil. Grease the pies with this mass. Sprinkle with sesame seeds on top and send to the preheated oven.
Step 8
Bake at 200C ° for 10 - 15 minutes - until golden brown.
Step 9
These pies are very tender due to the combination of filling ingredients. And golden sesame seeds make the pies extremely attractive. They must be served hot, because they are lamb. Enjoy your meal!
