Zucchini caviar with mayonnaise as from the store
Many summer residents prepare squash caviar with mayonnaise. Prepare zucchini caviar according to our step-by-step recipe and make sure it tastes like two peas in a pod! It's all about the special additive - namely the mayonnaise. You can treat it differently, but in this case, this sauce provides the squash caviar with a special texture and delicate taste. Try it!
Ingredients
- zucchini - 1 kg
- salt - 1 tbsp. l.
- onion - 250 g
- vegetable oil - 100 ml
- tomato paste - 100-120 g
- mayonnaise - 130 g
- sugar - 100 g
- bay leaf - 1 pc.
- freshly ground black pepper - 1 tsp.
STEP-BY-STEP COOKING RECIPE
Step 1
To prepare zucchini caviar with mayonnaise "as from a store", wash the zucchini. If the peel is too tough, peel it off. Remove large seeds. Cut the pulp into cubes.
Step 2
Pass the prepared zucchini through a meat grinder with a large wire rack. Place both bowl and salt a little. Leave for 15 minutes, then fold over a sieve and squeeze lightly.
Step 3
Peel the onion and chop finely. Heat 20 ml of vegetable oil in a skillet and fry the onion, stirring occasionally, until transparent. Transfer to a saucepan or heavy-walled saucepan.
Step 4
Add minced zucchini, tomato paste, mayonnaise and remaining vegetable oil. Stir and simmer for 40 minutes over low heat. Stir occasionally so that the mass does not burn.
Step 5
Add sugar, bay leaves, salt and freshly ground black pepper. Simmer, stirring occasionally, over low heat for 1 hour. The resulting mass should have a delicate, homogeneous consistency.
Step 6
For courgette caviar with mayonnaise, wash the jars and lids thoroughly. Then sterilize in any way you know. Turn over onto a clean towel and leave until use.
Step 7
Remove the bay leaf from the resulting squash caviar. Pour it into the jars, cover and place the jars on the bottom of a large saucepan lined with a thick towel. Fill with water until it reaches about half of the jar. Bring water to a boil and sterilize for 15 minutes.
Step 8
Roll up the jars of squash caviar. Turn over onto a folded towel and leave to cool completely. You can cover the jars with a towel. Store ready-made squash caviar with mayonnaise "as from a store" in the refrigerator.
