Grilled halloumi with pickled pear

Halloumi cheese is a visiting card of Cypriot cuisine. Halloumi has a higher melting point than the usual Adyghe cheese or suluguni. It can be fried on the grill or in a grill pan sprinkled with olive oil. After roasting, halloumi can be sprinkled with chopped basil, thyme, oregano, or mint. This cheese goes well with vegetables and fruits such as pears and figs. The chef of the Maetless restaurant, Andrey Zavarnitsin, offers grilled halloumi with pickled pear.

Ingredients
  • halloumi - 110 g
  • pear in syrup - 40 g
  • orange sauce - 40 ml
  • orange - 1 pc.
  • butter - 15 g
  • sugar - to taste

STEP-BY-STEP COOKING RECIPE

Step 1
Prepare orange sauce. Remove the zest from the orange and grate on a fine grater. Peel the orange itself from the films and squeeze out the juice. Mix the juice with the zest. Melt the butter and sugar in a saucepan. When the caramel is browned and begins to thicken, pour the juice with the zest into it and simmer for a few minutes.
Step 2
Cut the cheese into rectangular plates measuring 3 x 10 x 0.5 cm and grill on both sides.
Step 3
Place the grilled halloumi on a dish, put a pear cut in half next to it and put a gravy boat with orange sauce.
