Fruit salad with coconut
This fruit salad is a light and crazy delicious dessert with the aroma of the famous Pina Colada cocktail. There is not a drop of alcohol in it, so it can be safely prepared even for a children's party. All fruits, except pineapple, can be selected to your liking.
Ingredients
- 1 ripe pineapple
- 500 g strawberries
- 4 tangerines
- 4 bananas
- 300 g blueberries or blueberries
- half a coconut or 1/2 cup coconut
- 1/2 cup coconut cream
- 1/4 cup pineapple juice
STEP-BY-STEP COOKING RECIPE
Step 1
Lay the pineapple horizontally on the board, cut off the top with leaves and the bottom. Set the pineapple upright. Cut the rind off the side about 1 cm thick.
Step 2
Lay the pineapple horizontally on the board again and carefully cut out all the dark "eyes" with a small knife.
Step 3
Cut the pineapple lengthwise into quarters. Try a piece of the core - it is most likely very tough. Cut off the core (usually 2 cm deep). If the heart is soft and sweet, leave it.
Step 4
Slice pineapple across into 1/2-inch slices.
Step 5
Peel the bananas and cut into slices. Remove the leaves from the strawberries, cut the berries into 2–4 pieces. Peel the tangerines and cut into wedges.
Step 6
Crack the coconut and peel off the shell. Put the white pulp in a blender and chop to make small pieces, or grate the nut.
Step 7
Whisk the coconut cream with pineapple juice.
Step 8
Combine fruits, berries, and coconut in a large bowl and drizzle with the dressing. Divide the salad into bowls or cups and serve.
