Lemon muffins with cream cheese frosting

Lemon muffin is one of the most popular recipes in the world. This is not surprising, lemons have such a bright, refreshing aroma. According to this recipe, you can make one large cake or 12 small ones. Be sure to prepare the icing, with it the cake turns out not only beautiful, but also more delicious.

Ingredients
  • 420 g flour
  • 290 g butter at room temperature
  • 500 g of sugar
  • 4 eggs
  • 1 glass of kefir
  • 1/3 cup lemon juice
  • 2 tbsp. l. grated lemon zest
  • 1 tbsp. l. vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp soda
  • 1/2 tsp salt
  • 3 cups powdered sugar
  • 4 tbsp. l. cream cheese
  • 2 tbsp. l. butter
  • 1 tsp vanilla extract
  • 2 st. l. milk

STEP-BY-STEP COOKING RECIPE

Step 1
1. Remove the butter and cream cheese from the refrigerator in advance. Preheat oven to 175 ° C.

2. Sift flour with salt, baking soda and baking powder.

3. Whisk the butter and sugar with an electric mixer until a light cream. Add eggs and vanilla extract, one at a time, beat well.

4. Alternately add kefir and flour to the butter-egg mixture, quickly stirring the dough. Add lemon juice and zest, stir.

5. Divide the dough into small silicone molds (about 7/8 of the height), flat and bake for 20 minutes. Cool the finished muffins completely, then gently remove from the mold.

6. For the icing, whisk the butter, cream cheese and 1 cup of powdered sugar with an electric mixer, then add the vanilla extract and another cup of powdered sugar, beat until smooth. Pour in the last glass of powdered sugar, stir and pour in 1 tbsp. l. milk, stirring the glaze well.

7. Apply the icing to the completely cooled muffins.
