Raspberry-nut cake

Delicious, delicate cakes with raspberry-nut flavor. Raspberries add aroma, bright color to the cake, and spice of nuts. Due to the glaze, the cake retains its freshness for a long time.

  • - flour - 60 g
  • - baking powder - 0.5 tsp.
  • - chicken eggs - 70 g
  • - sugar - 55 g
  • - butter - 55 g
  • - honey - 1 tsp.
  • - nuts (almonds or walnuts) - 50 g
  • - rubbed raspberries with sugar or jam - 1-2 tbsp.
  • - coconut flakes - 2 tbsp.
  • for glaze
  • - cream 20% - 100 ml
  • - raspberries mashed with sugar - 2 tbsp.
  • - powder gelatin - 1 tsp.

STEP-BY-STEP COOKING RECIPE

Let's make the cake dough. Mix flour and baking powder, sift.
Step 3
Grind the toasted nuts (almonds or walnuts) in a coffee grinder until they are pasty.
Step 4
Mix eggs (70 g) and sugar (45 g) and beat with a mixer until fluffy.
Step 5
Melt butter and honey, remove from heat.
Step 6
Add nut butter and the remaining sugar (10 g).
Step 7
To the egg mass, 1 tbsp. add the flour mixture to a spoon. Mix and beat with a mixer, so that there are no lumps.

It turns out a thick dough.

Add the melted creamy honey mixture to the dough, mix with a spatula.

For more taste, aroma and color, add raspberries mashed with sugar or raspberry jam. And be sure to grind the jam through a sieve. We transfer the dough into a pastry bag.

Grease the baking tins with butter. If you have silicone molds, do not grease with oil. We put the dough into the cells of the mold for 2/3 of the volume. We put the form in the refrigerator for half an hour.
Step 12
We bake in an oven preheated to t 170 C until tender, 15 minutes. The baking time depends on the volume of the mold. Check baked goods for a dry match.
Step 13
Let the baked goods cool slightly and remove from the mold.
