Ingredients

- strawberry-cranberry mousse: - strawberry + cranberry (frozen) - 150 gr; sugar - 50 gr; gelatin - 8 gr; water for gelatin - 48 g; cream 33% - 150 gr.
- chocolate mousse: - dark chocolate - 70 gr; milk - 90 gr; gelatin - 4 g; water for gelatin - 24 gr; cream 33% - 150 gr.
- mirror glaze: 18 g gelatine 125 ml water 225 g sugar 225 g glucose syrup 10 g cream from 33% 100 g white chocolate
STEP-BY-STEP COOKING RECIPE
Step 1
Sponge cake: melt chocolate with butter. Pour half the sugar over the whites and beat until firm peaks. Beat the yolks with sugar until whitening, add the chocolate mass, beat. Add egg whites and stir gently with a spatula, add cranberries (optional). Pour on a baking sheet lined with parchment, temperature 180 ° C - 15 minutes.
Step 2
We take the shape in the form of hearts, pour the first strawberry mousse in half, leave in the freezer for 15 minutes, then the chocolate mousse and cover with a biscuit (pre-cut with a mold or cutting in the form of a heart). We leave in the freezer for 5-6 hours. We take out and pour with glaze.
