Raspberry-vanilla-apricot cake financier
It was a discovery for me! I didn't cook so much, but these finances just drove me crazy. Delicate, moist, unusual. Add a crunchy shell to them, vanilla buttercream on top, apricot marmalade, a thin layer of white chocolate and raspberries ... Lots of flavors, different textures - it's just delicious!

STEP-BY-STEP COOKING RECIPE
Step 1
So, let's prepare the base-financier cakes. Mix together sugar, almond flour, wheat flour, salt and baking powder.

Let's make the oil noisette. To do this, melt butter in a saucepan to a temperature of 144 ° C, the butter acquires a characteristic nutty aroma. Strain from sediment.

Add noisette oil and mix everything. Transfer the mixture to a pastry bag and place in the molds.

Put fresh raspberries into the dough and immerse them.

Bake finance for 15 minutes at 165 ° C. When cool, remove from the mold and place in the freezer.

For vanilla cream, mix cream cheese with trimolin and pre-soaked gelatin, melted in the microwave. Add vanilla seeds. Stir in half-whipped cream. Transfer to a pastry bag.

For apricot marmalade, I used apricot puree, dried apricots. Pour dried apricots overnight or for a few hours to soften. Cut it into small pieces.

Put ground apricots (or apricot puree), chopped dried apricots, lemon zest in a saucepan, you can add a little passionfruit for a slight sourness. Warm up to 35-40 ° C and add pectin and sugar, stirring with a whisk. Boil. Add soaked gelatin. Add citric acid. Pour into molds where financiers were baked. Leave to harden.
Step 10
Let's prepare chocolate decorations. Temper the white chocolate and apply it in a thin layer on a guitar tape painted with pink colored cocoa butter.

As soon as the chocolate starts to set, cut into rectangles and leave to crystallize.

Let's prepare the gourmet glaze. This is a crunchy layer. To do this, melt white or dyed chocolate. You can add a little colored cocoa butter to white. Mix with a blender with vegetable oil. And add almond crumbs and rice balls.

Remove the financier from the freezer, put it on a skewer and dip in the glaze.

Place the vanilla cream on top.
