Chocolate Cheesecake with Gellied Cherry
Cheesecake with dark chocolate and cherry liqueur is topped with a lot of slightly gelled glossy sour cherries. The combination is fabulous!
Ingredients
- split form 24 cm
- basis:
- chocolate chip cookies 200 g
- melted butter 65 g
- filling:
- curd cheese 900 g
- dark chocolate 225 g
- sour cream 270 ml
- egg 4 pcs.
- sugar 150 g
- salt 1 tsp
- cherry liqueur 4 tbsp
- cherry fill:
- frozen cherries 600-800 g
- sugar 2 tablespoons
- corn starch 3 tbsp
STEP-BY-STEP COOKING RECIPE
Step 1
In a food processor, mix the cheese, sugar and salt until smooth. Use a spatula nozzle, not a whisk (so that no air gets into the filling, you just need to mix the ingredients well). Without switching off, add eggs one by one, then sour cream and after it chocolate, each time achieving a complete combination of the components
Step 2
Wrap the form with foil, pour the filling over the base, flatten. Place in another larger mold with high sides. Pour boiling water into a large mold so that it reaches the middle of the side of the cheesecake mold in height.
Step 3
Cherry layer: boil frozen or thawed cherries with sugar over low heat for 10-15 minutes. Pour a little juice into a glass, cool well, add starch to the juice and stir. Add a starchy solution to the hot cherry, stir, remove from heat, then allow the mass to cool and stabilize. The mass becomes like a glossy light jelly. Spread the mass over the surface of the cheesecake, cool completely.
