Mackerel sarma
Ingredients
  • mackerel 1 kg
  • onion 3 pcs.
  • peeled walnuts 0.5 cups
  • peeled pistachios handful
  • a handful of seedless raisins
  • 1 bunch parsley
  • 1 cup olive oil
  • ground cinnamon 0.5 tsp
  • ground black pepper 0.5 tsp
  • red chili pepper 0.5 pcs.
  • eggs 4 pcs.
  • salt
  • wheat flour 1.25 cups
  • bread crumbs 250 g
  • vegetable oil 1.25 cups

STEP-BY-STEP COOKING RECIPE

Step 1
Clean, gut and wash the fish. Remove the skin, cut off the head, separate the fillets from the bones and chop.
Step 2
Peel the onion, cut into cubes. Grind walnuts and pistachios in a mortar. Rinse and dry the raisins. Finely chop the parsley. Finely chop the chili pepper.
Step 3
Heat olive oil in a frying pan, fry the onion until golden brown. Add nuts, raisins, cinnamon, ground pepper and finely chopped chili, and season with salt to taste. Stir well, simmer for 5 minutes, then add parsley, stir again, remove from heat and cool.
Step 4
Combine the cooled mixture from the frying pan with chopped fish fillets, mix well the minced meat.
Step 5
Beat the eggs, sift the flour on a flat plate. Form cutlets from small pieces of cooked minced meat, roll them in flour, dip in beaten eggs and breaded in breadcrumbs.
Step 6
Heat vegetable oil in a deep frying pan, fry cutlets until golden brown on all sides. Serve hot.
