Middle Eastern cottage cheese salad
Middle Eastern cuisine is rich and generous with vibrant combinations. Many Middle Eastern salads are based on vegetables and lettuce combined with light dressings. A traditional Middle Eastern salad is often made with hummus and always with pomegranate seeds. At 15/17 Bar & Grill, this salad is made with the addition of farm cottage cheese.
Ingredients
- fresh cucumbers - 4 pieces
- Baku tomatoes -2 pcs
- red onion - ¼ a whole onion
- quince - 10 g
- olive oil - 10 ml
- salt, pepper to taste
- fresh spinach leaves - 20 g
- fresh sorrel leaves - 20 g
- parsley - 10 g
- mint -2 small sprigs
- cottage cheese at least 9% fat - 2 tablespoons
- grenade grains - 20 g
STEP-BY-STEP COOKING RECIPE
Step 1
Peel the cucumbers and cut into cubes. Cut the tomato into cubes. Peel the red onion, finely chop the cilantro.
Step 2
Place the cucumbers, tomatoes, onions and cilantro in a bowl, add the olive oil, salt and pepper and stir to make the bottom base for the salad.
Step 3
Tear the spinach and sorrel leaves coarsely. Tear off the mint and parsley leaves from the stem. Place the spinach, sorrel, parsley and mint over the vegetable seasoned with oil.
Step 4
Pre-knead the cottage cheese into grains, and then add to the salad.
Step 5
Stir the salad and serve, sprinkle with pomegranate seeds.
