Red mullet stuffed with pine nuts
Red mullet meat is tender and juicy - both boiled and fried. Red mullet goes on sale fresh, frozen or canned in oil; hot smoked red mullet is also good
Ingredients
- 4 red mullets weighing 250 g each
- 70 g pine nuts
- 2 large tomatoes
- 1 medium onion
- 2 cloves of garlic
- 5 sprigs of parsley
- 0.5 tsp dried basil
- olive oil
- salt, freshly ground black pepper
- baked vegetables for serving
STEP-BY-STEP COOKING RECIPE
Step 1
Clean the fish from scales and entrails. Rinse with water and pat dry with paper towels. Make 2-3 slant cuts on the sides. Season with salt, pepper and brush with olive oil.
Step 2
Chop the onion and garlic. Fry with olive oil until soft, 5 minutes. Add nuts, dried basil, and finely chopped parsley. Stuff the fish.
Step 3
Fry in a hot grill pan, 3-4 minutes each. from each side.
Step 4
Cut the tomatoes into 1 cm thick slices and drizzle with oil. Fry, 1 minute each. from each side. Season and serve with fish and baked vegetables.
