Salmon in balsamic glaze with grilled vegetables

Salmon is a noble fish that requires special treatment. During cooking, it is important to calculate the time to the minute so as not to overdry the fish. It is necessary that the fish in the middle remain slightly moist, then it will be juicy. When buying fish, pay attention that the pieces are of the same thickness and size, then they will all cook at the same time.

Ingredients
  • 4 cloves of garlic
  • 6 tbsp. l. balsamic vinegar
  • 600-700 g salmon fillet on the skin
  • 1.5 st. l. Teddy bear
  • 1 tbsp. l. with a heap of Dijon mustard
  • salt, freshly ground black pepper
  • olive oil
  • parsley for serving
  • 1 large eggplant
  • 1 large zucchini
  • 2 multi-colored sweet peppers
  • 3 cloves of garlic
  • 3 tbsp. l. olive oil
  • 2 tsp lemon juice
  • 2 tbsp. l. soy sauce
  • 1 st. l. Teddy bear
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Cut the eggplant and zucchini into 5-6 mm slices. Cut the bell peppers into 6 pieces. Peel and finely chop the garlic, mix with olive oil, lemon juice, soy sauce and honey, salt and pepper the marinade. Place vegetables on a large tray and pour over the marinade. Leave it on for 10 minutes.
Step 2
Prepare the icing. Peel and finely chop the garlic. In a small skillet or saucepan, heat 1 tbsp. l. olive oil over medium heat, add garlic and fry, stirring occasionally, until aroma appears, 1-2 minutes. Add balsamic vinegar, honey, mustard, salt and pepper, mix well and cook over low heat until thickened, 3-4 minutes.
Step 3
Preheat oven to 200 ° C. Cut the salmon fillet into 4 portions. Place the fillets, skin side down, on a parchment-lined baking sheet. Brush the fillets with glaze and place in the preheated oven for 5 minutes. Glaze the fish again and return to the oven for another 5 minutes.
Step 4
Preheat a grill pan and sauté the vegetables. Transfer to a serving dish, place salmon and sprinkle with parsley.
