Black rice goes well with seafood and fish: that's why we chose the best option for rice - grilled halibut and squid. And to emphasize the delicate texture of fish and seafood, they added a garlic-lemon emulsion to the dish.

Ingredients
  • squid - 100 g
  • halibut - 60 g
  • butter - 60 g
  • salt to taste
  • sibulet onion - 5 g
  • chicken broth - 100 ml
  • garlic oil - 20 ml
  • freshly squeezed lemon juice - 10 ml
  • paella rice - 50 g
  • onions - 10 g
  • garlic - 2 cloves
  • white wine - 15 ml
  • blueberry cuttlefish - 10 ml
  • smoked paprika to taste

STEP-BY-STEP COOKING RECIPE

Step 1
To prepare black rice, wash the rice, fry the onion until transparent, add paprika, stir, then add raw rice, stir again, fry over medium heat and gradually add white wine and cuttlefish ink.
Step 2
To prepare the emulsion, add whipped garlic butter and freshly squeezed lemon juice to the chicken broth.
Step 3
Fry calamari and halibut on the grill and butter.
Step 4
We spread black rice, squid, halibut, pour the emulsion on top, salt and decorate the sibulet with onions.
