Snowballs with marshmallows
Ingredients
  • 6 eggs
  • 200 g sugar + 100 g for caramel
  • 1 liter of milk
  • vanilla pod
  • 4 pieces of colorful marshmallows

STEP-BY-STEP COOKING RECIPE

Step 1
Separate the whites from the yolks. Beat the egg whites on medium speed with a mixer until stiff. While whisking, gradually add 50 g of sugar. Whisk until crisp.
Step 2
Heat the milk in a large saucepan, not boiling. Using 2 tablespoons, form the beaten egg whites into balls or dumplings. Dip them gently into barely boiling milk. Prepare snowballs in batches, they should not touch each other.
Step 3
After 10-15 seconds. Turn the snow over and cook for another 10 seconds. Transfer to a sieve at some distance from each other.
Step 4
Beat the yolks until white, dense with the remaining sugar. Transfer to a clean heavy-bottomed saucepan.
Step 5
Strain the milk, return to the pan, adding the vanilla pod cut along the length. Bring to a boil. Remove from heat. Strain, remove the pod.
Step 6
Pour boiling milk into the yolks, continue heating over low heat until the cream thickens. Cool it down to room temperature.
Step 7
Pour the egg cream into the bowls. Add snowballs and garnish with chunks of marshmallow, cut into small cubes. For convenience, dip a knife in hot water when cutting marshmallows, so the cubes will not stick together.
