Young zucchini salad with mozzarella and crispy bacon
Don't be confused by the presence of bacon in this young courgette salad with mozzarella. Because all its other ingredients are extremely useful: spinach, basil and olive oil are accompanied by young zucchini and cheese.
Ingredients
- 4 slices thinly sliced bacon
- 2-3 small young zucchini
- 2 tbsp. l. olive oil
- 125 g spinach
- salt, freshly ground black pepper
- 2 large mozzarella balls
- 2 tbsp. l. balsamic vinegar
- a few sprigs of basil
STEP-BY-STEP COOKING RECIPE
Step 1
Fry the bacon in a well-heated skillet until crisp. Transfer to a paper towel to remove excess oil. Cut into small pieces or crush in a mortar.
Step 2
Cut the zucchini into 1 cm thick slices, place in a preheated pan where the bacon was fried, add a little olive oil and fry the zucchini on both sides until golden brown, 1-2 minutes.
Step 3
Transfer the zucchini mugs to a napkin and place the spinach leaves in the same pan. Add salt, pepper, keep on fire for 1-2 minutes, until spinach leaves shriveled, stir and remove from heat
Step 4
Cut the mozzarella into 7 mm slices. Arrange the courgettes, mozzarella and spinach on bowls, alternating with each other. Sprinkle with crispy bacon on top, drizzle with olive oil and balsamic vinegar. Garnish with basil leaves and serve.
