Cabbage soup with boiled beef
For a long time cabbage soup with boiled meat was considered a festive meal in Russia. Their main time is from Christmas to Lent. During the holidays, cabbage soup was made rich, they did not spare meat, for flavor they added dried porcini mushrooms, sometimes smoked meat and sour cream, and sour cream was put not in a plate, as we do now, but in a pot of cabbage soup.
Ingredients
- a handful of dried goribs
- 3 medium onions
- 3 medium turnips
- 600 g sauerkraut
- 150 ml cabbage brine
- 100 g butter or ghee
- 1.5 kg beef with bone (shoulder or back)
- 1 medium carrot
- 5 black and allspice peas
- Bay leaf
- 3 cloves of garlic
- small bunch of dill
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Fill the mushrooms with cold water and leave for at least 3 hours.
Step 2
Peel 2 onions and cut into small cubes. Peel the turnip and cut into thick slices. Put onions, turnips and sauerkraut in a fireproof saucepan or ceramic pot, pour in 150 ml of cabbage brine or water, add butter or ghee, cover and place in an oven preheated to 180 ° C. Cook for 3 hours.
Step 3
At the same time, put the meat in a saucepan, pour 3 liters of cold water and put on fire. Bring to a boil, reduce heat and remove foam. Add the onion, peeled of the top husk, and carrots. Cook with a quiet boil for 3–3.5 hours. Add black and allspice peas an hour before cooking and salt.
Step 4
Remove the meat from the broth, separate from the bone and disassemble into portions. Strain the broth into a clean saucepan.
Step 5
Cut the mushrooms into small pieces. Add stewed cabbage and mushrooms to the broth, put on fire and cook for 1 hour. For 10 minutes. add the bay leaf before finishing.
Step 6
Peel and chop the garlic very finely, chop the dill. Add to the cabbage soup, cover and simmer for another 5 minutes.
