Kebabs with pistachios and bulgur
Ingredients
  • minced lamb 300 g
  • pistachios (peeled) 4 tablespoons
  • bulgur 0.7 cup (s)
  • onion 1 pc.
  • garlic 3 cloves
  • zira 1 tsp.
  • cilantro 3 sprigs
  • parsley 3 sprigs
  • thyme 3 sprigs
  • sumac for serving
  • olive oil 3 tablespoons
  • chili to taste
  • salt to taste
  • black pepper to taste

STEP-BY-STEP COOKING RECIPE

Step 1
Cook bulgur until tender. It, already cooked, needs a little more glass. Finely chop the greens. Chop the onion and garlic. Peel the pistachios and chop in a blender (not into dust!) Or chop finely with a knife.
Step 2
Mix the minced mutton, bulgur, pistachios, onion, garlic, cumin in a bowl. Season with salt, pepper, add a couple of tablespoons of olive oil. Stir well and beat off the minced meat, hitting it with force on the cutting board. The minced meat should lighten and become dense, viscous. Leave it in the refrigerator for half an hour.
Step 3
Remove the kebabs from the oven, add oil and sprinkle with sumac.
