Quick vegetable soup with minced meat
Surely you have days when you need to quickly cook lunch, but there is practically no time. In this case, take a look at our minced meat soup. It is so satisfying that you won't need an exact second. And you need a minimum of time to cook it - just fry the minced meat with onions, and during this time cut the vegetables. The stove will do the rest for you.
Ingredients
- 1 medium onion
- 2 cloves of garlic
- 2 medium potatoes
- 2 medium carrots
- 2 tbsp. l. olive oil
- 500 g minced beef
- 800 g chopped tomatoes, s / s
- 1 liter beef broth
- 2 tsp Worcester sauce
- 1 bay leaf
- 1 tsp dried mixture of italian herbs
- 1 cup fresh frozen peas
- 1 cup fresh frozen corn
- 1 cup fresh-frozen green beans
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
1. Peel the onion and garlic and chop finely. Peel potatoes and carrots, cut into medium cubes.
Step 2
2. Heat the olive oil in a saucepan, add the onion, garlic and ground beef and fry for 5 minutes until the minced meat changes color. Then add potatoes and carrots, tomatoes and pour in broth. Bring soup to a boil, add Worcestershire sauce, bay leaf and Italian herb mixture. Cook for 10 minutes.
Step 3
3. Add the frozen vegetables to the saucepan and cook for another 10-15 minutes, until the potatoes and carrots are cooked through. Season the soup with salt and pepper.
