Vegetarian soup with chanterelles and spinach
Ingredients
- chanterelles 40 g
- potatoes 50 g
- onion 10 g
- carrots 10 g
- olive oil 5 g
- spinach 15 g
- concasse tomatoes 10 g
- sour cream 30% 30 g
STEP-BY-STEP COOKING RECIPE
Step 1
Soak the chanterelles in cold water for 15-20 minutes.
Step 2
Cut the potatoes into cubes, add water (500 ml) and cook.
Step 3
Cut carrots and onions into thin strips, add chanterelles and fry in olive oil until tender.
Step 4
Add the mixture of vegetables to the potatoes, cook for 5 minutes.
Step 5
Taste with salt and pepper.
Step 6
Add chopped spinach and diced tomatoes a minute until tender.
Step 7
Drizzle with olive oil and serve with sour cream.
