Salad of grilled vegetables with cheese vats

You can grill vegetables and serve them "as is", or you can go a little further and make a salad out of them by adding chanakh cheese to it. It will become both a great appetizer and an excellent side dish.

Ingredients
  • 6 eggplants
  • 8 sweet peppers
  • 8 large tomatoes
  • 3 sweet red onions
  • 1-2 red chili, optional
  • 300 г Arla Apetina® Soft
  • 1 medium bunch of cilantro
  • 2 cloves of garlic
  • vegetable oil
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Charcoate eggplants, peppers, tomatoes and onions on all sides over a live fire (gas burners on the stove will also work). Place vegetables in a bowl under plastic wrap, cool, then peel and chop.
Step 2
Chop cilantro finely together with garlic, pepper and a pinch of salt, mix with oil.
Step 3
Season vegetables with spicy oil and arrange on plates. Sprinkle with crumbled cheese and serve immediately.
