Eggplant stewed with minced meat and rice
Eggplant stewed with minced meat and rice is a delicious, nutritious dish that can make a wonderful lunch or dinner. This recipe is especially good in the season of fresh vegetables. It cooks quickly, it turns out very tasty.
Ingredients
- homemade minced meat (I have beef) 300 g
- carrots 1 pc.
- onions 1 pc.
- rice 1/2 cup (s)
- eggplant (large) 1 pc.
- tomatoes 2 pcs.
- garlic (cloves) 3 pcs.
- tomato paste 1 tbsp
- salt (to taste) 1 tsp
- ground black pepper 1 pinch (s)
- greens for serving 1/8 bunch (a)
- vegetable oil for frying 1 tbsp.
STEP-BY-STEP COOKING RECIPE
Step 1
Peel the onions and carrots, cut the onions into half rings, and cut the carrots into cubes and fry in vegetable oil, stirring occasionally, until lightly blushed.
Step 2
Cut the eggplants into small pieces and cover with slightly salted water for 10 minutes to remove the bitterness.
Step 3
Add the minced meat to the fried carrots and onions, season with salt, pepper and fry until tender for about 20 minutes, stirring occasionally.
Step 4
Cut the tomatoes into small cubes (if desired, remove the skin from the tomatoes) and add along with the eggplants and garlic passed through a press to the fried minced meat, cover and simmer over low heat for 10 minutes.
