Grilled cod fillet and seafood with hollandaise sauce
Ingredients
  • fillet of white sea fish 2 pcs.
  • king shrimps 10 pcs.
  • octopus tentacles 10
  • olive oil 3 tablespoons
  • garlic 2 cloves
  • salt, pepper, saffron, spices to taste
  • yolk 2 pcs.
  • butter 100 g
  • lemon juice 3-4 tablespoons

STEP-BY-STEP COOKING RECIPE

Step 1
Cut the fish (I have cod fillets) into portions and marinate with the shrimps in a mixture of olive oil, salt, garlic, saffron or turmeric and tarragon. Any favorite herbs and spices from the Mediterranean cuisine will do. Leave to marinate for at least an hour.
Step 2
Send the octopus tentacles into boiling water for no more than 40 seconds. Take out and dry.
Step 3
Fry the fish in a dry, well-heated frying pan (there is oil in the marinade) until cooked, depending on the thickness of the slices, 3-4 minutes on each side, fry the shrimps on each side for 1.5 minutes, until an orange color is formed. Dip the tentacles in the oil marinade and fry in a grill pan for a minute.
Step 4
For the sauce, melt 100 grams of butter and cool. Mix 2 yolks 3 tablespoons of lemon juice and heat in a water bath until a cream is formed, stirring constantly. Pour a little oil into the egg cream, stirring with a whisk, and season to taste. I added lemon zest, salt and garlic powder.
