Egg pudding based on fish broth. The dish has a delicate texture, like a soufflé. The fishy taste is not particularly felt, and when you get to the chawanmushi filler, there are three types of meat - chicken, mussel and mushroom.
Ingredients
- mussels 3 pcs.
- oyster mushrooms 3 pcs.
- chicken breast 30 g
- chicken eggs 2 pcs.
- fish broth 300 ml
- soy sauce 1 tbsp
- myrin 1 tbsp.

STEP-BY-STEP COOKING RECIPE
Step 1
Let's prepare the products. Cook fish broth in advance. To fill the chawanmushi, I took a slice of chicken, mushrooms and mussels. Pieces of chicken, mushrooms and mussels separately need to be poured with boiling water and left for 1 minute.

Beat the eggs with a whisk until they form a foam, pouring in the soy sauce and mirin in turn. Salt to taste.

Gradually pour in the fish broth. Then you need to strain everything through a strainer or cheesecloth. The mixture should be homogeneous, without lumps.

Pour hot water into a deep baking sheet, place the molds and bake at 200 ° C for 30 minutes.
