Medallions with lingonberry sauce
Ingredients
- pork tenderloin 1 pc.
- lingonberry soaked 70 g
- sugar 40 g
- starch 2 tsp
- lemon juice 2 tsp.
- water 80 ml
- salt (sea salt with herbs)
STEP-BY-STEP COOKING RECIPE
Step 1
Wash the pork tenderloin and cut into medallions. Grease the medallions with a pastry brush with vegetable oil, season with sea salt and herbs, fry in a pan over high heat until golden brown.
Step 2
Transfer the fried medallions to a patch and bake in an oven preheated to 180 ° C for 30 minutes.
Step 3
Put the soaked lingonberries with the juice in a saucepan, add sugar and, stirring constantly, bring the berries to a boil. Pour in the starch, kneading thoroughly so that no lumps form, boil the berries for a couple of minutes until thickened. Add lemon juice and water, stir and simmer for another 1 minute.
Step 4
Place the medallions on a wooden skewer. Put lemon wedges on a plate. Gently place the skewer with medallions on lemon wedges and pour over the lingonberry sauce.
