Creamy salad soup
We recommend serving classic English sandwiches with cucumber with this soup: cut the crusts from pieces of toast bread, spread the bread with butter, add a little salt. Put peeled cucumbers cut into thin slices on the bread, add a little more salt, pepper and combine the pieces. Press down and cut crosswise into quarters.
Ingredients
- 1 head of romano salad
- 1-2 lettuce heads
- 1 large potato
- 1 large onion
- 2 cloves of garlic
- 200 ml cream 30-38% fat
- 1 tbsp. l. butter
- freshly grated nutmeg
- salt, freshly ground white pepper
- croutons (loaf) for serving
STEP-BY-STEP COOKING RECIPE
Step 1
Peel the potatoes, cut into small pieces, place in a large saucepan, add 1 liter of boiling water, season with salt and cook until the potatoes are soft, about 20 minutes.
Step 2
Chop the lettuce leaves coarsely, add to the pot with potatoes and onions, stir and bring to a boil. Remove from heat and beat with a blender until smooth.
Step 3
Add cream, salt, pepper and nutmeg, bring to a boil again and serve with croutons.
