Zucchini with tomatoes and cheese

Warm salad, and at the same time - absolutely summer. Baked zucchini, juicy tomato slices, salted cheese - it combines everything we love. Let's cook this quick and easy salad more often, it increases the degree of mood, but not the number of calories eaten.

Zucchini with tomatoes and cheese
Ingredients
  • 4 medium courgettes
  • 200 g feta cheese or Adyghe cheese
  • 120 g fat sour cream
  • 1 small bunch of mixed herbs (parsley, green onions, dill, basil, or tarragon)
  • olive and butter
  • 100 g flour
  • 1 tsp dry provencal herbs
  • salt, freshly ground black pepper
  • 2 large sweet tomatoes
  • 1 small sweet red onion

STEP-BY-STEP COOKING RECIPE

Step 1
Chop the herbs. Crumble the cheese (if it's Adyghe cheese, add a little salt), mix with herbs and sour cream, pepper.
Step 2
Cut the courgettes in half lengthways, then slice across into 1-1.5cm slices.
Step 3
Mix flour with Provencal herbs, add a little salt and pepper. Dip the zucchini in the flour mixture.
Step 4
In a large skillet, heat a 1: 1 mixture of butter and olive oil. Shake the flour off the zucchini and fry in batches, placing them in a single layer in the pan, until golden brown on both sides.
Step 5
Put the prepared zucchini in a bowl and brush with the cheese-sour cream mixture.
Step 6
Cut the tomatoes into slices, the onion into rings. Toss and place over the zucchini.
