Corsican soup with spelled
Now the word "spelled" is known only thanks to Pushkin's "The Tale of the Priest and His Worker Balda". Remember, Balda says there: "I was given boiled spelled" ... Spelled is a relative of wheat, and they cooked porridge from it in Russia. Nowadays spelled is popular in some Mediterranean countries. In Corsica, a delicious soup is made from it.
Ingredients
- 1.5 l chicken broth
- 200 g spelled
- 200 g dry motley or white beans
- 1 small onion
- 2 cloves of garlic
- 2 sprigs of mint
- 100 g of grated Parmesan cheese
- 40 g olive oil
- salt
- freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Soak the beans in cold water for 8 hours, then put them in a colander, put them in a saucepan, pour plenty of fresh water, bring to a boil and cook over low heat for 1 hour. Throw the beans in a colander.
Step 2
Cut the onion into thin half rings, chop the garlic. Disassemble the mint into leaves, set aside 8 leaves, chop the rest.
Step 3
Heat the oil in a heavy-bottomed saucepan and fry the onions over medium heat, 5-7 minutes. Season with salt, add garlic and cook for 30 sec. Pour in broth and bring to a boil.
Step 4
Add spelled, reduce heat and cook for 15 minutes. Add beans, stir and cook for 30 minutes. Add the parmesan, chopped mint and 1/2 cup boiling water. Season with salt to taste, stir and serve immediately. Place 2 mint leaves in each plate.
