Currant liqueur
If you love the famous Creme de cassis blackcurrant liqueur, you don't have to spend a lot of money on it. After collecting some berries, you can easily make your favorite drink at home.
Ingredients
- 700 g black currant
- 1.3 l of vodka
- sugar (the amount will depend on the weight of the liquid)
STEP-BY-STEP COOKING RECIPE
Step 1
Remove the tails from the currants, rinse and dry the berries. Put the berries in the bowl of a food processor and chop a little (you don't need to bring the puree to a consistency, just crush the berries).
Step 2
Place the currants in a large glass jar and cover with vodka. Close the jar tightly. Shake it and leave it in a cool, dark place for a month.
Step 3
After a month, strain the liquid twice through a fine sieve. Weigh the liquid.
Step 4
For regular blackcurrant liqueur, you need to add sugar 20% of the weight of the liquid (multiply the weight of the liquid by 0.2 to get the weight of the sugar). Add sugar and stir until dissolved.
Step 5
To make a thick and sweet liquor like Cremee de cassis, you need 45% sugar by weight of the liquid (multiply the weight of the liquid by 0.45 for the weight of the sugar).
Step 6
Pour liquor into bottles and leave for another 5-7 days in a dark place.
