Ginger roll with cream and candied fruit

Delicious and delicate roll with ginger flavor. You can make the filling for the roll to your taste. I have a roll with condensed boiled milk and cream cheese. You can add berries or chopped fruits, fried nuts to the cream.

Ingredients

  • wheat flour 45 g
  • corn starch 15 g
  • orange peel 2 tsp.

  • egg yolk 1 pc.
  • salt 1 pinch (s)
  • cocoa powder (for cream) 1 tbsp.
  • condensed milk (boiled - for cream) 200 g
  • cream cheese (for cream) 120 g
  • dark chocolate (for decoration) 60 g
  • milk (for decoration) 2 tbsp.
  • candied fruits (for decoration) 30 g
  • berry (for decoration) 30 g

STEP-BY-STEP COOKING RECIPE

Step 1
Let's prepare the dough for the CORK. Take 2 eggs and separate the whites from the yolks. Protein (2 pcs) put in the refrigerator. Put the yolks (2 pcs) into the mixer bowl. Add 1 egg yolk and the remaining whole eggs (2 pcs). Add 100 g of sugar and beat the yolk mixture with a mixer until it becomes light and fluffy, about 5 minutes.
Step 2
Add sifted flour, starch and orange zest, 1 teaspoon of dried ginger to the yolk mixture. Beat the mass again.
Step 3
Whisk the cooled 2 squirrels with a small pinch of salt until soft peaks. Then add the icing sugar and beat until firm peaks.
Step 4
Gently add proteins to the dough. The dough is airy and thick.

Cover the roll baking dish (23 * 33) with a silicone mat (do not grease with oil) or baking paper (grease with oil). Distribute the dough in a shape, 1 cm high. There should be no bubbles on the dough, if there is, pierce with a toothpick. Bake the cake in an oven well preheated to 180 ° C, 15 minutes until golden brown.
