Kenyan bean salad
Kenyan beans are a versatile ingredient. Its crispness is usually highlighted in salads with an egg, but avocado plays a role in this vegetarian recipe. The unusual wasabi dressing gives the salad both spiciness and Asian notes on the palate.
Ingredients
- wasabi sauce -70 g
- olive oil -40g
- radish -32g
- avocado -100g
- green peas -68g
- fresh spinach -44g
- fresh mint, leaves -8g
- green beans -100g
STEP-BY-STEP COOKING RECIPE
Step 1
Cut the avocado into slices.
Step 2
Stir in fresh spinach leaves, beans, green peas and avocado wedges with wasabi sauce and stir.
Step 3
Cut the radish into rings.
Step 4
When serving, garnish with radish rings and pour over with olive oil. Add mint as desired.
