Kveri or Georgian dumplings

Kveri with cheese is essentially a Georgian analogue of dumplings. But the whole point is in their filling: qveri is prepared with young suluguni cheese. Mamiya Jojua offers his own version of the filling - suluguni with Imeretian cheese. Serve the qveri hot, accompanied by butter, sour cream or yogurt.

Ingredients
  • suluguni - 600 g
  • Imeretian cheese - 400 g
  • egg white - 2 pcs
  • butter - 20 g
  • flour - 20 g
  • premium flour - 1 kg
  • salt - 20 g
  • water - 500 ml

STEP-BY-STEP COOKING RECIPE

Step 1
Knead a tough qveri dough. Give him a little rest, in the meantime prepare the filling.
Step 2
Grate suluguni and Imeretian cheese on a coarse grater, add egg whites, butter and flour. Mix the resulting mixture thoroughly.
Step 3
Pinch off 40 g of dough, form a ball and roll thinly.
Step 4
Place 40 g of cheese mixture in the center of the cake and mold the qveri.
Step 5
Boil in salted boiling water for 8 minutes over high heat. Serve hot with melted butter.
