Cauliflower steak with crispy pesto with beans and tomatoes
Steaks for vegetarians that taste and color are just as good as meat steaks. The secret is that neutral cabbage, when seasoned with pesto, which is bright in all respects, becomes a delicacy. Especially if you roast these vegetable steaks on real coals.
Ingredients
- 1 small bowl of cauliflower
- 100 ml vegetable oil
- 20 g sea salt
- 5 g freshly ground black pepper
- 230 g canned red beans in their own juice
- 40 g panko crackers
- 20 g of finely grated Parmesan cheese
- 1 can of white beans in its own juice
- 120 g cherry tomatoes
- 90 g mayonnaise
- 10 g Dijon mustard
- 60 g parsley leaves
- 2 g finely grated lemon zest
- 3 cloves of garlic
STEP-BY-STEP COOKING RECIPE
Step 1
Place two baking sheets on the middle and highest level of the oven, preheat the oven to 220 degrees.
Step 2
Cut the head of cabbage lengthwise into "steaks" 2-3 cm thick. Put the steaks in one layer on a greased baking sheet and brush them with a brush. Sprinkle with salt and pepper. Place on a medium oven shelf for 30 minutes. Gently turn the steaks once while cooking.
Step 3
Place the red beans in a bowl and pour over 1 tbsp. olive oil, sprinkle with salt and pepper, stir. Grease the second preheated baking sheet with oil, put the beans on it and place on the highest level of the oven for about 15 minutes.
Step 4
Put parsley leaves, lemon zest, chopped garlic into the mixer bowl, add the remaining olive oil, salt, pepper. Grind in mashed potatoes.
Step 5
Transfer half of the spice mixture to another bowl, add panko rusks, parmesan and stir with your hands. Place the white beans and halved cherry tomatoes in a bowl with the remaining mixture. Stir until the tomatoes are covered with spices. Mix the mustard and mayonnaise separately.
Step 6
Remove the beans and cabbage trays from the oven. Brush the cabbage steaks with mustard mayonnaise and sprinkle with breadcrumbs.
Step 7
Combine white beans with red baked beans. return to oven for 5-7 minutes to brown the beans and crisp the croutons. Collect the cooked cabbage steak and side dish and beans on the plates. Sprinkle with chopped parsley.
