Okroshka! The most favorite summer soup of Russians. Put lightly salted fish instead of meat products and okroshka will turn into a real winner's soup!

Ingredients
  • boiled potatoes 2-3 pcs.
  • boiled eggs 2 pcs.
  • fresh cucumber 1-2 pcs.
  • radish 8 pcs.
  • green onions 1 bunch (s)
  • dill 3 branches
  • mint 3 branches
  • parsley 3 branches
  • lightly smoked salted salmon 100 g
  • mustard Maheev 1 tbsp
  • mayonnaise Maheev 2 tbsp
  • sour cream 2 tbsp
  • salt to taste
  • black pepper to taste
  • okroshechny kvass 1 l

STEP-BY-STEP COOKING RECIPE

Step 1
Mix boiled yolk with mustard, salt, add a spoonful of mayonnaise and grind until pasty.
Step 2
Dice boiled potatoes, fresh cucumber and egg white. Cut the radish into rings.
Step 3
Chop green onions, dill, mint and parsley, salt and mash slightly with a spoon. Fragrant herbs will let the juice and flavor okroshka brighter.
Step 4
Combine chopped vegetables and herbs. Add mustard yolks, sour cream and mayonnaise. Mix well, season with salt and pepper. Pour in kvass.
Step 5
Cut the salmon into thin slices. Pour okroshka into plates and put several slices of lightly salted smoked salmon.
