White pizza with vegetables and pesto

What is it white, if yellow-green? Italians are not color blind at all, but all pizzas that do not use tomato sauce (in this particular pizza it is replaced by pesto) are called "white". Even if the filling is completely green herbs and vegetables.

Ingredients
  • 100 g ricotta or fat fresh cottage cheese
  • 450 g ready-made pizza dough
  • 17 ml olive oil
  • 1 medium zucchini
  • 2 leeks
  • 120 g asparagus
  • 102 g fresh or thawed green peas
  • 10 g coarse sea salt
  • 70 g pizza mozzarella
  • 200 g homemade pesto
  • 1 clove of garlic
  • 10 g finely grated lemon zest
  • 50 g small lettuce leaves (arugula, watercress)
  • 30 g small basil
  • 30 g peccorino or any other hard spicy cheese
  • 50 g toasted unsalted pistachios

STEP-BY-STEP COOKING RECIPE

Step 1
Place the pizza tray on the bottom shelf of the oven. Preheat the oven to the maximum temperature.
Step 2
Ricotta or cottage cheese, if too wet, squeeze through cheesecloth. If using cottage cheese, beat it with a blender to make it smoother and softer.
Step 3
Roll out the dough into a 5 mm square or circle to fit on a baking sheet and transfer to a sheet of baking paper lightly oiled with olive oil. Grease the dough on top with a brush.
Step 4
Gently transfer the paper with the dough to a hot baking sheet and place in the oven for 5 minutes, the dough should be crispy and golden brown.

Peel the zucchini, cut in half, remove the seeds and cut into thin slices. For leeks, use only the white and pale green portion. Slice the stem in half lengthways, then slice across into thin half rings. Peel the asparagus from the bottom from the coarse skin from the bottom with a vegetable knife, cut the stems across into pieces if they are too large. In a bowl, combine leeks, zucchini, asparagus, peas in a bowl, add 1 tbsp. olive oil and salt.

In another bowl, combine ricotta (curd), thinly sliced mozzarella, pesto, minced garlic, lemon zest and stir well.

Spread the ricotta (curd) mixture onto the dough. Place prepared vegetables on top.

Meanwhile, combine the fine green salad and basil with the remaining olive oil.

Remove the pizza from the oven and place it on a suitable sized wooden board. Sprinkle with green leaves, finely grated cheese and nuts. Let it cool slightly. then slice and serve.
