Pumpkin soup with chickpeas and shrimps

A very tasty and hearty soup, as it turned out, shrimp goes well with pumpkin.

Pumpkin soup with chickpeas and shrimps
Ingredients
  • pumpkin pulp 400 g
  • nut 1 glass
  • garlic (cloves) 2 pcs.
  • hard cheese 100 g
  • boiled shrimp 200 g
  • rosemary 1 pinch (s)
  • vegetable oil for frying 1 tbsp.
  • 1 pinch (s) nutmeg
  • salt 1 pinch (s)
  • freshly ground black pepper 1 pinch (s)

STEP-BY-STEP COOKING RECIPE

Step 1
Soak the chickpeas overnight in salted water. Cook for 1.5-2 hours until tender.
Step 2
In a saucepan in vegetable oil, fry the garlic and rosemary.
Step 3
Add the diced pumpkin and fry together for 5-6 minutes.
Step 4
Add chickpeas, some chickpeas can be set aside for decoration.
Step 5
Season with salt, pepper, add nutmeg. Grind with a hand blender.
Step 6
Pour back into the pot, add finely grated cheese. Stir until the cheese is melted.
Step 7
Pour the soup into bowls, garnish with boiled shrimps, herbs and the remaining chickpeas.
