Karniyaryk - stuffed eggplant
Fragrant eggplant with minced meat, onions, tomatoes and tradewind sauce.
Ingredients
- eggplant 4 pcs.
- minced chicken 400 g
- tomatoes 3 pcs.
- garlic 3 pcs.
- onion 1 pc.
- pepper paste 1.5 tbsp
- parsley 1 bunch (s)
- pepper mixture pinch (s)
- salt 0.8 tsp
- passata 300 ml
STEP-BY-STEP COOKING RECIPE
Step 1
Wash the eggplants, without cutting off the stalk, peel them in strips. Salt well and leave for 20 minutes. Dab off the released juice with a paper towel. Put in the oven for about 25 minutes.
Step 2
Fry the onion and garlic in a frying pan in oil. Add pepper paste, minced meat and fry, breaking with a spatula for about 8 minutes. Then add the peeled and diced tomatoes, salt and pepper.
Step 3
We cut the eggplants lengthwise, being careful not to cut through. Carefully open the sides and stuff with the filling. Place the eggplants in a mold or on a baking sheet. Place a tomato slice on top of each eggplant.
Step 4
Let's make the sauce. Finely chop the onion, fry until golden brown in olive oil, add 300 ml of trade winds. Bring to a boil and season with salt, hot red and black pepper.
