Yayla soup (rice soup with mint)
Ingredients
- rice 100 g
- lemon 1 pc.
- meat broth 2 l
- natural yogurt 2 cups
- wheat flour 1 cup
- egg yolk 3 pcs.
- salt
- butter 2 tablespoons
- dried mint 1 tbsp.
STEP-BY-STEP COOKING RECIPE
Step 1
Rinse the rice. Squeeze lemon juice. Pour the broth into a saucepan, bring to a boil, add rice and cook over low heat for 15-20 minutes.
Step 2
Pour yogurt into a separate saucepan, add flour, egg yolks and lemon juice. Dilute the mixture with broth and beat with a whisk until smooth.
Step 3
While stirring, pour the sauce into the boiling soup, season with salt to taste, bring to a boil again and remove from heat.
Step 4
Heat butter in a frying pan, add mint, heat for 2-3 minutes until a distinct mint smell appears.
Step 5
Pour the soup into bowls, add mint and butter and serve.
