Seabass ear with smoke
It doesn't take long to make a fragrant fish soup from fish bones, and the right ingredients: herbs, vegetables, lemon zest, herbs and olive oil turn this soup into a real vitamin treasure.
Ingredients
- 10 g celery stalk
- 30 g mini potatoes
- 20 g cherry tomatoes
- 10 g of mini carrots
- 80 g wild sea bass fillet
- 200 g fish bones
- 2 g parsley
- 2 g basil
- 5 g of lemon
- 2 g of salt
- 1 g black pepper
- 10 g olive oil
- 200 g fish broth
STEP-BY-STEP COOKING RECIPE
Step 1
Cook fish bone broth. Dry the fish bones with a paper towel and dust them with flour. Fry the bones in olive oil, then add a little white wine and water, whole fresh vegetables: carrots, onions, celery stalk, bay leaves, allspice. Cook for 1-1.5 hours. Strain the broth.
Step 2
Then add the prepared vegetables, wild sea bass fillets and cherry tomatoes. Bring to a boil.
Step 3
Season with salt, pepper and lemon zest.
