Baked cauliflower
Cauliflower is best baked with something like butter, spices, or a sauce. This baked cauliflower recipe has it all - olive oil, spices and fish sauce, and even rice powder.
Ingredients
- 1 kg cauliflower
- 3 tbsp olive oil
- 3 green Thai chili
- 3 cm finely chopped lemongrass without hard outer layers
- 4 leaves kaffir-lime
- ¼ cups of fish sauce
- ¼ cups of lime juice
- ¼ sticky rice
- 5 onions
- 2 cups chopped pea shoots (tendrils)
- 1 cup chopped cilantro
- 1 cup chopped mint
- salt to taste
STEP-BY-STEP COOKING RECIPE
Step 1
Preheat oven to 210 C. Place cauliflower and butter on a baking sheet lined with baking paper. Fry, stirring occasionally for 35-45 minutes. Let cool slightly.
Step 2
Cut into small pieces. Transfer to a large bowl, add chili, lemongrass, kaffir lime leaves, fish sauce and lime juice. Mix well.
Step 3
Place the rice in a medium skillet, fry over medium heat, stirring constantly for 10-15 minutes. Then grind in a mill.
Step 4
Onions, pea shoots, cilantro, mint and 2 tsp. add toasted rice powder to cauliflower, season with salt to taste.
