Italian Panzanella salad

Traditional Tuscan salad with pickled dried bread, tomatoes and capers.

Italian Panzanella salad
Ingredients
  • 400 g tomatoes
  • 1 loaf of bread
  • 1 cucumber
  • 1 red onion
  • 1 tbsp. l. basilica
  • 55 g capers
  • 2 tbsp. l. red wine vinegar
  • 125 ml olive oil
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Peel cucumbers, chop tomatoes, onions. Break the bread into pieces.
Step 2
Combine all ingredients in a large bowl and marinate at room temperature for at least 1 hour (but not more than 12 hours). Do not refrigerate. Serve at room temperature, garnish with parsley.
